The new Microsoft Teams desktop client now offers users the ability to change the order of channel conversations. The default view has 'Start a new post' at the top of the Posts tab within any channel.
However, if you prefer to go back to the way the classic Teams client displayed channel conversations you can select the 'More options' ellipses in the upper right and choose 'See new posts at bottom'.
This setting will change the conversation order in all displayed channels.
